Tropical Overnight Oats


These cold London mornings have me dreaming of warmer climates. Unable to escape to the sun quite yet I decided to create a breakfast recipe that would let me pretend to be beachside in Bali. I would usually just use almond milk with overnight oats but the coconut milk in the recipe adds an amazing creaminess, plus we all know how well pineapple and coconut go together (piƱa colada anyone?)! I also find having a high fat breakfast gives me tons of energy so the coconut is the perfect addition here.





Ingredients
75g oats
300ml almond milk
40ml coconut milk (from a tin)
2 tbsp chia seeds
2 tbsp desiccated coconut
honey to taste
fresh fruit (I used melon, mango, pineapple and kiwi
coconut flakes to top

Simply mix together all your ingredients, pop in the fridge in a sealed container and leave overnight (or a least for a few hours). Top with more fresh fruit and coconut flakes.
