Couscous Salad

Leon sent me their new Happy Salads book a few weeks ago, and I finally got around to making one of the salads from it. Well, kind of. I'm awful at following recipes, so I based this simple salad on their giant couscous salad. It's pretty similar, I just added a few things based on what was in my fridge. 

175g dry couscous
12 aubergine
1 small courgette
7 cherry tomatoes
1 big red onion
olive oil
2 sprigs of basil
squeeze of lemon

Cook the couscous – I usually just put the dry couscous in a big bowl, cover with boiling water and place a lid on top until all the water has been absorbed. Griddle the courgette and aubergine in a pan until chargrilled and cooked through. Finely dice the onion, cook in a separate pan on a low heat until caramelised (about 10 minutes), remove the onions from the pan and add the cherry tomatoes, cook until they are splitting open. 

Add all of the cooked vegetable to the couscous, tear over the basil, add a squeeze of lemon and a lug of olive oil, give everything a stir, then season with salt and pepper to taste. 

Served by itself as a main this will feed 2, if served as a side it will feed 2-4.
