Savoury Vegan Waffles


Savoury waffles. Not that conventional, but they work! The great thing about this recipe is that you can actually have these waffles sweet or savoury – just switch up the toppings. The waffle itself is vegan, sugar free, super healthy and really delicious.  As I decided to use spelt flour, it means they are not gluten free but you could definitely sub in another flour like buckwheat. Spelt flour is way easier on the digestive system than regular flour, plus it has lower levels of gluten so unless you're gluten intolerant, give it a go! It adds a really amazing nutty slightly sweet flavour, which works so well in this recipe.

Ingredients
2 tbsp ground flaxseed
1 tbsp chia seed
6 tbsp water
150g spelt flour
190g almond milk
50g water
olive/coconut oil

Combine the flaxseed and chia seeds with 6 tbsp and leave until it's gelled and thickened – this will take 10ish minutes.
Whisk the spelt flour with the almond milk and water, then add the flax and chia mix. 
Oil the waffle iron liberally with your oil of choice – you don't want the waffles to get stuck!
Pour the mix in, you will probably need to spread with a spatula as the mix is quite thick. When they're golden and cooked through top with whatever you like. I went with houmous, sauteed chilli kale and a boiled egg. They're also great with classic fruit and maple syrup too.
