Coconut and goji berry muesli

I originally came up with this recipe in an attempt to make a festive looking granola and I loved it so much that I've made it probably 6 times since. It's so easy, the combination of coconut and goji is amazing, plus it's pretty low in sugar, unlike most cereals you'd buy in the shop. 

200g jumbo oats
35g melted coconut oil
1 1/2 tbsp honey
pinch of pink salt
35g coconut flakes
15g goji berries

Mix the jumbo oats with coconut oil, honey and pink salt and stir everything until it's evenly coated. Pour onto a lined baking tray and bake at 180c for around 10 minutes, or until the oats are golden. Add the coconut flakes and bake for a further 3 minutes. Keep a close eye – it goes from delicious to burnt in about a second. Take it out of the oven and leave to cool. Once fully cooled, add the gojis and transfer to a jar. Enjoy with almond milk, sprinkled on smoothie bowls or just straight outta the jar!
