Lunch box inspo: Middle Eastern inspired bowl



I love to eat mezze style and this bowl allows me to do that without having to prep a million different things. I just prep everything but the greens on a Sunday evening and eat it through to Friday, but you can totally make enough for 3 days then prep again midweek if you fancy a change or everything to be a bit fresher.

greens: lettuce, green beans 
carbs: sweet potato fries
fats: houmous
proteins: chickpeas

Ingredients (makes enough for one day, double, triple, quadruple as you like)
1/2 tin of chickpeas
1 medium sweet potato
avocado/ olive oil
turmeric, cayenne pepper, paprika, garlic granules, salt + pepper
1 baby gem lettuce
50 g green beans

Hints

Turmeric roasted chickpeas
Strain the chickpeas, toss with 1/2 tbsp of oil, and a 1/4 tsp each of ground turmeric, cayenne pepper + paprika, salt and pepper to taste and roast for 10-15 minutes at 180c. The longer you leave them the crispier they'll be. 

Sweet potato fries
Chop the sweet potato, toss in 1/2 tbsp oil, garlic, salt and pepper and roast for 40 minutes at 180c. 

Creamy houmous + dukkah
I usually just buy houmous because lazy, but if you fancy making your own my recipe for the best houmous ever is here!

Shred a load of lettuce + greens beans, or any other greens you fancy and assemble all the (cooled) ingredients in your tupperware. Sprinkle with dukkah and you're done!
