Valentine's Day smoothie bowling


Valentine's Day is just around the corner, and honestly, whilst I think it's kind of lame, I can totally get on board with cute pink and red themed foods. Hence the creation of this delicious and super cute smoothie bowl. Make it for bae, make it for your bestie (#galentines) or just make it for yourself – you're worth it!

I'm a big fan of vegetable smoothies as I'm all about the toppings – but if you want yours to taste a bit less like salad, sub the cauliflower for frozen overripe banana. 

Ingredients
300g frozen cauliflower
1 large peeled cucumber
1 scoop of vanilla protein powder (I use sunwarrior)
3 tsp beetroot powder
1/2 tbsp powdered maca
1/2 tbsp powdered lucuma
1 tbsp cashew/ almond butter or coconut cream
300 ml coconut milk (you may want more depending on desired consistency)

Hints

Add everything to your blender and blend on high until creamy and totally combined. Depending on which blender you have, you may have to stop mixing and scrap down the sides a few times due to all the frozen stuff, but persevere it's worth it!

Top with your favourite toppings, I went for granola, frozen banana + raspberries, coconut chips, freeze dried strawberries + rose petals.
