Pitaya Bowl

I can't say I'd ever heard of a pitaya bowl before coming to Bali, but they're kind of like the Indonesian answer to an açai bowl. The colour absolutely blows my mind, and they taste pretty great too. 

Ingredients (makes 2)
1 pitaya/ dragonfruit
3 big frozen bananas (slice before you freeze!)
1 peeled cucumber

Put the cucumber into a blender with the dragon fruit and blend until it's smooth and liquidy. Slowly add the banana chunks until smooth and thick. There should be enough liquid from the dragon fruit and cucumber, but if you like you can add a splash of nut milk/coconut water etc. Top with everything, and dig in!
