Raw Millionaire Bites

I used to make regular millionaire shortbread all the time back in uni, but I honestly prefer this healthy + vegan friendly version. It's still just as rich as the real deal, but the dates and the oats give it such a natural taste, plus the edition of orange makes it a little bit lighter with the added bonus of making it reminiscent of a Terry's Chocolate Orange. Hopefully if you recreate you'll be able to slice them up better than I did...

ingredients (makes 8-10 squares)
100g oats
1 tbsp coconut oil
1 tbsp honey / maple syrup

orange caramel
125g dates
juice of 1 orange (100ml)
1 tsp maca

50g cacao butter
15g honey/ maple syrup
12g cocoa powder
pinch of pink salt 

Blend the oats into flour. Melt the coconut oil with honey and stir into the oat flour. Press into your container of choice (I went for a silicone loaf pan – the silicone makes it makes it much easier to get out in one piece). Place into the freezer to set (20 minutes)

Chop dates into small pieces, add to a non-stick pan over a low heat with the orange juice and heat slowly until the date pieces have softened (5-10 minutes). Sprinkle over the maca and stir. Take off the heat, allow to cool slightly, then blend to a smooth paste. Layer over the oat base, and put in the freezer to cool and set. It will remain pretty soft and squishy but should set enough so that if you poke it, it will retain its shape. 

Add the cacao butter to a glass bowl over a pan of lightly simmering water. Once totally melted, stir through the honey/ maple, cocao powder and pink salt. Leave to cool slightly then pour over the orange caramel and put back into the freezer to set for a couple of hours.

Once everything has set, slice into squares – if you let the chocolate reach room temperature it might be easier to do without everything cracking but I'm impatient and wanted to sample asap!

nb. if you're using medjool dates, you could probably skip the second step and just add less oj but as I haven't tried it I'm not sure.
