Paleo Pumpkin Protein Pancakes

I'm not usually a pancake breakfast kinda gal, but when I was in Bali, D and I would almost always get a pancake floater at brunch which meant I came back kinda craving them. So I decided to whip some up myself. But of course I couldn't just make regular pancakes – I wanted them to be light, high protein, and super healthy. I actually didn't expect them to turn out quite as well as they did but they're the perfect autumny treat. 

Hints (makes 15 small pancakes, enough for 1-2 people)
125g of cooled steamed pumpkin
2 eggs
1.5 tbsp coconut flour
2 tbsp vanilla vegan protein
1 tsp baking powder
1/4 tsp vanilla extract
coconut oil for frying

Add the pumpkin to a food processor with the eggs and mix until totally combined and airy. Add the rest of the ingredients and mix to combine. 

Using a tablespoon, drop and lightly spread a spoon of pancake mix into a coconut oiled frying pan. I made them in batches of 3. I'd recommend keeping them small as the mixture cooks quickly and no one wants burnt pancakes.
