Fat Ballz

Fat Ballz are all the rage at the moment. They're essentially low sugar bliss balls/ energy balls, tons of good fats, minimal amounts of dates. I only started making them the other day but I'm hooked. They're the perfect snack, smoothie topper, after dinner treat... The list is endless. I was worried they wouldn't stick together without the dates, but I think the coconut butter is key – so don't skip it. It can be hard to find, but it's the easiest thing in the world to make, and failing that you can pick it up online or at most health food stores.

Hints (makes 14 small ballz)
50g walnuts
75g almonds
20g coconut flakes
1 tbsp vegan vanilla protein powder (I use Tropeka, if your protein is powdery or doesn't taste great by itself/ if you don't have any you can leave this out)
1/8 tsp pink salt
20g coconut butter
1/2 tsp vanilla extract
1/2-1 medjool date

1. Chuck the walnuts, almonds and coconut flakes into your food processor and process to a fine meal
2. Add the protein powder and pink salt and pulse to combine
3. Add the coconut butter, vanilla extract and medjool date and process until everything is combined and evenly distributed
4. Roll into balls – I went for 14 but you can make them bigger or smaller (probably not smaller or they'd be the size of malteasers but whatever floats your boat)
