Goji + Pistachio Vegan White Chocolate

I love chocolate. I mean, surely most people do, but I really, really love chocolate. Any kind (apart from mint) and I'm in. I've been making vegan milk and dark chocolate for years, but have always lamented the fact that I seemed unable to create white chocolate of the vegan variety. Until now. I mixed the chocolate with gojis + pistachios for that festive feel, but it's great alone, drizzled over stuff (cookies) or mixed with other combinations such as mulberries, coconut, dates, raisins, nuts... Think fancy fruit and nut.


hints (serves 10)
50g cacao butter
50g coconut butter
1/2 tbsp cashew butter
1/2 tbsp maple syrup
1/4 tsp vanilla extract
5g gojis
5g pistachios

1. Melt the cacao butter over a double boiler on a lowish heat
2. Once the cacao butter is melted add the coconut butter
3. Once both the cacao + coconut butter are melted, take off the heat and add the cashew butter, maple syrup and vanilla extract
4. Chop the gojis and pistachios and mixed into the chocolate
5. Pour into moulds and leave to set in the fridge then store in an airtight container. (I'm not sure how long it lasts as I usually eat the whole thing in 1-2 days)
